Spinach/bean pasty

Thought I’d share a recipe I sort of got the idea from a friend and adapted to suit myself.
You’ll need:
– 3 sheets of puff pastry
– 1 packet frozen spinach
– 1 can (400g) 3 or 4 bean mix
– 1 egg
– some grated cheese
– a bit of salt and pepper
– a bit of milk to brush on pastry

Thaw out the spinach and get rid of the excess juice. I put it in a colander and squeeze the juice out with a fork.

If you’re like me and can’t be bothered making puff pastry, make sure you get it out the freezer to thaw.

In a bowl mix the spinach, the drained beans, egg, cheese and add some salt and pepper to season if you want.

Distribute the mix over the 3 sheets of pastry – so on 1 sheet you would have 2 piles for 2 pasties. Then fold over the pastry so it’s folded in half and cut in half again so you’ve got 2 squares. Repeat for the other 2 sheets of pastry. As each square is finished fold up the edges so the mix doesn’t ooze out while cooking. Then brush some milk on each pasty and cook in a moderate oven until pastry is browned on top.

These can be frozen if they make it that far. The last 2 times I’ve made these people have popped in so I haven’t had many left over.
